Easiest Lunch/Meal in the world.

Don’t fall into the trap of buying unhealthy food at lunch or not packing something simply because it takes a few extra minutes. I look forward to eating my packed lunch and carry my lunchbox like a proud kindergartner on their first day of school.

Mix rice with Turmeric, put in tupperware.

Mix beans, favorite spices, salt and pepper in a bowl. Put on top of rice.

Cut half avocado. Add to tupperware.

Warm up for 1 minute and you are SET.

Pair it with a good magazine (I suggest VegNews for great info and recipes). Be inspired by healthy eating! The more you know, the harder it is to eat poorly.

Eat up.
